Boiling Point and the Vapor Pressure Curve
Students understand from the vapor pressure curve that a liquid boils at the temperature where its vapor pressure equals the external pressure, so lowering the pressure lowers the boiling point and raising it raises the boiling point.

Predict (before you touch anything)
If you heat water at the top of Mt. Fuji (about 0.63 atm), do you think it will boil below 100°C or above 100°C?💡 水が沸騰するとき、液体内部でできた泡(水蒸気)は周りから何に押されているでしょうか。When water boils, what is pushing on the vapor bubbles that form inside the liquid?
If you keep heating boiling water even harder, what do you think happens to the water temperature?💡 加えた熱が何に使われるかを考えてみましょう。Think about what the added heat is being used for.
Try it
In the starting state (Pressure 1.00 atm), set "Heater power" to 100 % and watch the dot (water temperature) on the vapor pressure curve move right toward the horizontal "Outside pressure" line, and whether bubbles appear in the water.
When the dot meets the outside-pressure line and boiling starts ("Boiling" tag), keep heating for a while and read "Water temp", "Vapor pressure" and "Boiling point" in the readout below.
While boiling, lower the "Pressure" slider to 0.60 atm and watch the bubbles and water temperature. Then raise it to 1.50 atm (or press "Pressure cooker") and observe what happens to the bubbles and what happens as heating continues.
Press "NEW: Reset", heat with "Heater power" 100 % until the water is about 50°C, then press the "Vacuum" button (0.07 atm) and observe the water temperature and the bubbles.
Press "Himalayas", "Mt. Fuji", "Sea level" and "Pressure cooker" in turn, record each boiling point, and compare it with where the lines cross on the graph.
Check
While heating at 1.00 atm, were bubbles forming inside the liquid when the water was about 70°C? What was the vapor pressure then?→ 泡は出ていなかった(表面からの蒸発だけ)。 No bubbles formed (only evaporation from the surface). At about 68°C the vapor pressure was about 0.28 atm, less than the outside pressure of 1.00 atm, so the water did not boil.
After boiling started and heating continued, what happened to the water temperature?→ 100.0°C It stayed constant at 100.0°C. Vapor pressure 1.00 atm = outside pressure 1.00 atm, and the added heat is used to turn liquid into vapor (heat of vaporization).
During boiling, what happened when you lowered the pressure to 0.60 atm, and when you raised it to 1.50 atm?→ 0.60 atm At 0.60 atm the boiling became violent (flash boiling) and the water cooled to the new boiling point of about 86.3°C, where it kept boiling. At 1.50 atm the boiling point rose to about 111.7°C, so vapor pressure < outside pressure; the bubbles disappeared and boiling stopped. With continued heating the temperature rose and the water boiled again at about 111.7°C.
What happened when you pressed "Vacuum" (0.07 atm) with the water at about 50°C?→ すぐに液体内部から泡が出て沸騰し、水温が約39.3°C まで下がって一定になった。 Bubbles formed inside the liquid immediately and the water boiled; the temperature dropped to about 39.3°C and stayed there. The boiling point was shown as 39.3°C, and on the graph the dot sat where the outside-pressure line crosses the curve.
Think further
Why does food cook faster in a pressure cooker? And why does rice cooked on top of Mt. In a pressure cooker the external pressure is about 1.5 atm, so water does not boil until its vapor pressure reaches that at about 112°C, letting food be heated above 100°C. On Mt. Fuji (about 0.63 atm) water boils at about 88°C and cannot get any hotter, so food is heated less.
Why does the water temperature fall when the pressure is suddenly lowered during boiling?→ 減圧すると水温が新しい沸点より高くなり、蒸気圧 > 外圧となって液体のいたる所で一気に気化が起こる。 After the pressure drops, the water is hotter than the new boiling point, so vapor pressure > external pressure and liquid vaporizes rapidly all through the water. Vaporization needs heat of vaporization, which is taken from the water itself, so the water cools to the new boiling point.
Common misconceptions
Water always boils at 100°C." 100°C is the boiling point only at 1 atm; at 0.07 atm water boils at about 39°C, and at 1.5 atm at about 112°C.
Heating boiling water harder makes it hotter." During boiling the added heat goes into vaporization, so the temperature stays at the boiling point as long as the external pressure is unchanged.

The vapor pressure curve is computed with the Antoine equation and fitted to pass through (100°C, 1 atm). The container pressure is treated as something set freely from outside; the pressure rise from the vapor produced and the size of the container are ignored. Pressures below 0.2 atm assume a vacuum pump, and the heating rate (proportional to heater power) and cooling are a simple model for visibility, so do not compare the timings with a real experiment.
