Vapor Pressure and Boiling Point: When Does a Liquid Boil?
Students understand that a liquid's vapor pressure rises steeply (exponentially) with temperature and that a liquid boils, forming bubbles inside the liquid, at the temperature where its vapor pressure equals the external pressure, so the boiling point depends on the external pressure and on the kind of liquid.

Predict (before you touch anything)
In a place with low air pressure, like the top of a high mountain, do you think water boils above or below 100°C?💡 液体の中に気泡ができるためには、その気泡が外から押しつぶされないことが必要です。For a bubble to form inside the liquid, it must not be crushed by the pressure pushing on it from outside.
Do you think the vapor pressure of water increases by the same amount when it is heated from 20°C to 40°C as when it is heated from 80°C to 100°C?💡 温度が高いほど、液面から飛び出せるエネルギーをもつ分子の割合がどうなるか考えましょう。Think about how the fraction of molecules with enough energy to escape the surface changes at higher temperatures.
Try it
With Liquid set to "Water" and External pressure at 101 kPa (sea level), set the "Liquid temp." slider to 20°C, 60°C, 95°C, and 100°C. Record the "Vapor pressure" readout and the shape of the curve on the graph.
At 100°C, while it is boiling, watch the bubbles forming inside the liquid in the cylinder on the left. Then lower the liquid temperature to 95°C and observe how the bubbles and the "Boiling / Not boiling" readout change.
Set the liquid temperature to 75°C and move the "External pressure" slider from 101 kPa → 30 kPa (high mountain) → 200 kPa (pressure cooker). Record where the boiling-point marker sits on the graph, the "Boiling point" value, and whether the liquid boils.
Return the external pressure to 101 kPa and, keeping 75°C, move the "Liquid" slider from "Water" → "Ethanol" → "Acetone". Compare the vapor pressure, boiling point, and whether each liquid boils.
Check
About how many kPa was the vapor pressure of water at 20°C, 60°C, and 100°C? What shape was the graph?→ 20℃ で約 2.3 kPa、60℃ で約 20 kPa、100℃ で約 101.3 kPa。 About 2.3 kPa at 20°C, about 20 kPa at 60°C, and about 101.3 kPa at 100°C. It was not a straight line but an exponential-looking curve that gets steeper as temperature rises.
At 101 kPa external pressure, what happened when the liquid temperature was lowered from 100°C to 95°C?→ 蒸気圧が約 84.5 kPa と外圧より小さくなり、「沸騰なし(蒸気圧 < 外圧)」になった。 The vapor pressure dropped to about 84.5 kPa, below the external pressure, and the readout changed to "Not boiling (vapor pressure < external pressure)". The bubbles inside the liquid shrank and disappeared, and only evaporation from the surface continued.
For water at 75°C, what were the boiling point and the boiling state at 30 kPa and at 200 kPa?→ 30 kPa At 30 kPa the boiling point fell to about 69°C, and since the vapor pressure of 38.6 kPa exceeded the external pressure, it boiled. At 200 kPa the boiling point rose to about 120°C and it did not boil. The boiling-point marker sat where the external-pressure line crossed the vapor pressure curve.
At 75°C and 101 kPa, what were the vapor pressures and boiling points of water, ethanol, and acetone?→ 蒸気圧は水 約 38.6 kPa、エタノール 約 88.0 kPa、アセトン 約 188 kPa の順に大きく、沸点は約 100℃、約 78℃、約 56℃ と低くなった。 Vapor pressure increased from water (about 38.6 kPa) to ethanol (about 88.0 kPa) to acetone (about 188 kPa), and the boiling points decreased: about 100°C, 78°C, and 56°C. Only acetone was boiling at this setting.
Think further
Water at 95°C evaporates from its surface, so why do no bubbles form inside the liquid?→ 液体内部の気泡の中は蒸気だけで、その圧力は蒸気圧(約 84.5 kPa)である。 A bubble inside the liquid contains only vapor, at the vapor pressure (about 84.5 kPa). It is pushed from outside by the 101 kPa external pressure, so it gets crushed and cannot survive. Only when the vapor pressure reaches the external pressure can bubbles grow, and boiling happens.
Why does acetone boil at a lower temperature than water? Acetone's intermolecular forces are weaker than water's (which has hydrogen bonding), so at the same temperature more molecules can escape from the surface and the vapor pressure is higher. Its vapor pressure therefore reaches the external pressure at a lower temperature.
Common misconceptions
Water always boils at 100°C." 100°C is the boiling point at about 101 kPa; at 30 kPa water boils at about 69°C, and at 200 kPa at about 120°C.
Below its boiling point, a liquid does not turn into gas." Evaporation from the surface happens at all temperatures, and there is always vapor present in an amount set by the vapor pressure.

The water curve is a smooth interpolation of measured data; ethanol and acetone are approximated with the Clausius–Clapeyron equation from their boiling points and heats of vaporization, so they differ slightly from measured values. The dots in the gas are vapor molecules only (1 dot ≈ 1.25 kPa); air is not drawn but the total pressure is assumed equal to the external pressure. The molecule counts and "measured" speed values fluctuate because there are few particles, so treat them as rough guides.
