Specific Heat Lab: Heating Water, Iron and Oil
Students understand that when the same heat Q is added to equal masses, the temperature rise ΔT = Q/(mc) is inversely proportional to the specific heat c, so water (large c) warms slowly while iron (small c) heats up quickly, and that water boils at 100℃, after which the added heat goes into latent heat and the temperature stops rising.

Predict (before you touch anything)
300 g each of water, iron and oil are heated on the same burner for the same time. Which do you think gets hottest, and which warms up the least?💡 夏の昼、日なたの鉄棒と、プールの水の温度の違いを思い出してみましょう。Think about how hot a metal bar in the summer sun gets compared with the water in a swimming pool.
If you keep heating the water in the same way after it reaches 100℃, what do you think happens to its temperature?💡 やかんでお湯をわかし続けたときの様子と、そのとき加えた熱が何に使われているかを考えてみましょう。Think about a kettle that keeps boiling, and what the added heat is being used for.

Check
When heated at 1000 W for 60 s, what was the heat added Q and the temperature rise of each substance?→ Q = P×t = 60,000 J Q = P × t = 60,000 J for all three. ΔT was +47.8℃ for water, +100.0℃ for oil and +444.4℃ for iron: iron rose most and water least. The ratio iron : oil : water = 9.30 : 2.09 : 1 (= 4184/450 : 4184/2000 : 1).
At 500 W, what was the temperature rise after 60 s? What happened when the heating time was extended to 120 s?→ 500 W・60 秒では Q = 30,000 J で、ΔT は水 +23.9℃、油 +50.0℃、鉄 +222.2℃ と 1000 W のときのちょうど半分。 At 500 W for 60 s, Q = 30,000 J and ΔT was +23.9℃ (water), +50.0℃ (oil), +222.2℃ (iron), exactly half the 1000 W values. At 120 s, Q = 60,000 J and ΔT matched the 1000 W, 60 s result. The temperature rise is proportional to power and time (to Q = P × t).
How was the particle motion related to the temperature?→ 温度が高い物質ほど粒子が速く動いた。 The hotter the substance, the faster its particles moved. At 1000 W for 120 s, "speed×" was 1.13 for water, 1.30 for oil and 2.01 for iron, in the same order as the thermometers (water 100.0℃ < oil 220.0℃ < iron 908.9℃).
When heated at 1000 W for 150 s, what happened to the water's temperature and to the heat added after it reached 100℃?→ 水は約 100 秒で 100℃ に達して沸騰し、その後は加熱しても 100.0℃ のままだった(ΔT = +80.0℃)。 The water reached 100℃ at about 100 s and boiled; after that it stayed at 100.0℃ (ΔT = +80.0℃) even while heated. Of the 150,000 J added, 49,584 J went into latent heat to turn water into steam, evaporating 21.9 g. "mcΔT + latent heat" was 150,000 J, equal to the heat added Q.
Think further
Coastal areas have smaller temperature differences between day and night, and between summer and winter, than inland areas. Water's specific heat (4184 J/(kg·K)) is much larger than that of rock or soil, so its temperature changes little for the same heat gained or lost. Because the sea warms and cools slowly, the temperature of the air around it changes more gently.
While the water is boiling, heat keeps coming from the burner, yet the temperature stays at 100℃. Why? During boiling, the added heat is not used to make the water particles move faster (raise the temperature) but as latent heat to turn liquid water into steam. Heat added Q = mcΔT + latent heat, so no energy is lost; it goes into the change of state, and the temperature stays at 100℃.
Common misconceptions
The idea that the same heat raises the temperature of every substance by the same amount. The rise depends on specific heat: the same 60,000 J gives +47.8℃ for water but +444.4℃ for iron.
The ideas that heat and temperature are the same thing, and that water's temperature keeps rising as long as it is heated. Heat is energy transferred; boiling water stays at 100℃ even while receiving heat.

This is an ideal model that ignores heat loss and the container's heat capacity, so all the heat goes into the substance (starting at 20℃, 300 g each). With long heating, iron goes above 900℃ and oil reaches 270℃; in reality heat escapes to the surroundings and oil starts to smoke around 300℃. The oil's specific heat is a typical value of about 2000 J/(kg·K). Particle speeds are drawn proportional to √(absolute temperature); it is worth adding that iron is a solid whose particles really vibrate in place.
